Mama Gill’s Dressing– by Louise

Chop up a lot of unions and cook them slow, in a skillet with butter.

Stir them often and do not brown.

Take the cornbread that you have been saving, crumble it up in several shallow pans.

Toast it lightly in the oven.

Mix it in a big bowl, or a dishpan.

Put in a few biscuits, very little light bread.

You may have to cook extra cornbread, use no sugar in it.

Freeze left over corn bread and biscuits for a couple of months, for the dressing.

Mix it with broth from boiling the turkey or hen, and some milk.

Home grown sage or store-bought rubbed sage, salt and pepper and chopped boiled eggs.

A young chicken or turkey-it never has as good a flavor-use an old one.

But remember that boiled egg. It turns to shoe leather if you have any to freeze in left overs.

Lightly stuff the hen or turkey or bake it in a flat pan with boiled hen parts.

Bake it in a medium oven, until 'it sets'.

I love the left overs. I wish I had some right now!

The last good wonderful thing that Mama Gill gave us.
